It’s a very chilly morning here, which means it’s a great day for Homemade Chicken Noodle Soup!
When I was a little girl, my Mama would make all kinds of homemade soups but my favorite was always her homemade Chicken Noodle Soup. This is basically her recipe, however, it never seems to come out tasting the same. (If you read our blog at all you will see a pattern here LOL)
Well let’s get to it, shall we!

Homemade Chicken Noodle Soup
1 large Onion
1 Clove Garlic
4 ribs Celery
4 large Carrots
1 tablespoon Olive Oil
3 large Chicken Breasts – boneless skinless
2 boxes Chicken Stock
1 small can diced tomatoes
1 tablespoon dried Parsley (you could use fresh if you have it on hand)
salt and pepper to taste
3/4 lb medium Egg Noodles
Dice onion, carrots and celery.
Add olive oil to pot and saute vegetables and garlic for about 5 minutes.
Add whole chicken breasts, chicken stock, tomatoes, parsley salt and pepper.
Cook for approximately 1 hour.
Remove chicken. Chop or shred into bite size pieces.
Return chicken to pot and add egg noodles.
Cook until noodles are done, approximately 15 minutes.
*In my family we always added a bit of grated Parmesan on top of the soup after it was in the bowl.
