This cake is the moistest cake we have ever had and my family LOVED it!!!

Many people have had this cake at Cracker Barrel and have been trying to come up with the recipe. Well, this one is mighty close.

This is a cake that most in the South grew up with right along side Coconut Cake. (Watch for that recipe coming up as well)

I found this recipe originally on The Country Cook . Be sure to check out their blog, lots of great recipes over there. I have tweaked a couple of things but the basics are the same.

I will say that the icing is very sweet. The next time I make it, I am going to use an icing my Mom used for our chocolate cakes, it was a butter icing that was coffee-flavored instead of chocolate.

Coca Cola Cake
 Ingredients:
1 box  Chocolate Fudge Cake Mix
1 small box (4 oz.) Instant Chocolate Pudding
Ingredients listed on back of cake mix box (eggs & oil – water not needed)
1 1/3 cups Coca Cola
1 stick sweet cream butter
3 tbsp. unsweetened cocoa
6 tbsp. heavy cream
1 3/4 cups (packed) powdered sugar
1 tbsp. vanilla extract
1/2 cup chopped walnuts (optional)
 
Preheat oven to 350 degrees
 
 
Mix cake mix as directed on the back of the box with the exception of the water. You will substitue Coca Cola for the water. However much water they require, you will add that amount of Coca Cola and then omit the water.
 
Add pudding and mix for approximately 2 minutes.
 
Pour into greased pan and bake for about 35 to 38 minutes.
 
While this is baking, melt a stick of butter in a medium sized sauce pan.
 
When it is melted add in the coco powder, cream and powdered sugar. Wisk together.
 
When mixture is smooth add in the vanilla and mix together.
 
Remove from heat.
 
Take cake out of the oven and pour the icing over the top of the cake as evenly as you can. This happens right when the cake comes out of the oven, do not let it cool first.
 
Scatter walnuts on top of the icing.
 
That’s it!!!! Enjoy!!!
