Crispy Oven Chicken Legs That Taste Fried Without the Mess
These crispy oven chicken legs are the kind of easy dinner that just makes sense.
They do not require a cart full of expensive ingredients. They do not need three pans, a kitchen meltdown, or a culinary degree. They just need to be hot, crispy, flavorful, and affordable.
Chicken legs are one of those old-school cuts that can still feed a family without making you clutch your pearls at the grocery store. And in a time when everything from eggs to paper towels seems to cost more than it should, that matters.
These chicken legs come out crispy on the outside, juicy on the inside, and full of flavor. They taste like something you fried, but without the grease splatter, the standing over the stove, or the lingering smell of oil in your kitchen three hours later.
And here’s the real kitchen magic.
The secret is baking powder.
Not baking soda. Do not let that little orange box trick you. Baking powder helps dry the skin so it crisps up beautifully in the oven.
Why You’ll Love These Crispy Oven Chicken Legs
These crispy oven chicken legs are simple, inexpensive, and family-approved.
They are perfect for busy weeknights, Sunday dinner, game day, or one of those nights when you need to feed everybody without spending a fortune.
You only need chicken legs, a few pantry seasonings, baking powder, and a gallon food storage bag.
That’s it.
No fancy nonsense. No deep fryer. No grease splatter.
Just crispy, juicy chicken that tastes way better than the amount of effort you put into it.
The Secret to Crispy Oven Chicken Legs
The biggest trick is getting the skin dry.
Moisture is the enemy of crispy chicken skin. If the chicken goes into the oven wet, it steams before it crisps. And steamed chicken skin is not the dream here.
To get crispy skin, you want to pat the chicken dry really well, season it with a little baking powder, bake it on a wire rack if possible, and cook it at a high temperature.
Chicken legs are dark meat, which means they are forgiving. They actually taste better when cooked past the basic safe temperature. While chicken is safe at 165°F, chicken legs are often better around 175°F to 185°F because the meat gets more tender and the skin has more time to crisp.
Basically, chicken legs can handle a little extra time in the oven.
Chicken breasts could never. Bless their dry little hearts.
Ingredients
8 chicken legs
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper, optional
You can also add a little Italian seasoning, poultry seasoning, or smoked paprika if you want a deeper flavor.
A Note About Baking Powder
Yes, regular baking powder works.
If you have aluminum-free baking powder, that is even better because it has less chance of leaving a slight metallic taste. But regular baking powder is perfectly fine as long as you do not overdo it.
Use baking powder lightly. The chicken should look seasoned, not like it fell face-first into a biscuit mix.
And again, do not use baking soda.
Baking soda can taste bitter fast, and we are trying to make dinner, not punish people.
How to Make Crispy Oven Chicken Legs
Step 1. Dry the chicken
Pat the chicken legs very dry with paper towels.
If you have extra time, place the chicken legs uncovered on a rack in the refrigerator for a few hours or overnight. This helps dry the skin even more.
If you do not have time, do not worry. Just dry them well and keep moving.
Dinner does not need to become a full-time job.
Step 2. Mix the seasoning in a bag
Add the baking powder, salt, garlic powder, onion powder, paprika, black pepper, and cayenne pepper to a gallon food storage bag.
Seal the bag and shake it well to mix everything together.
This keeps the seasoning contained and makes cleanup easier.
And honestly, anything that saves washing one more bowl is a tiny victory.
Step 3. Add the chicken and shake
Add the chicken legs to the bag with the seasoning.
Seal the bag tightly, leaving a little air inside so the chicken has room to move around.
Shake the bag until the chicken legs are evenly coated.
You want the seasoning mixture to lightly cover the skin. It should not be clumpy or heavy.
Step 4. Place the chicken on a rack
Set a wire rack over a rimmed baking sheet.
Line the baking sheet with foil first for easier cleanup.
Place the chicken legs on the rack with space between each piece.
The rack lets air circulate around the chicken, which helps the skin crisp instead of sitting in juices.
If you do not have a rack, you can still make this recipe on a regular baking sheet. Just flip the chicken halfway through cooking.
Step 5. Bake hot
Bake at 425°F for 40 to 45 minutes.
If you like your chicken legs well cooked and extra crispy, continue baking for another 10 to 15 minutes, until the skin is deeply golden and crisp.
Chicken legs are best when they reach about 175°F to 185°F internally.
Step 6. Rest and serve
Let the chicken rest for about 5 minutes before serving.
This helps the juices settle back into the meat instead of running all over the plate like they are trying to escape.
How Long to Bake Crispy Oven Chicken Legs
At 425°F, chicken legs usually take about 40 to 45 minutes.
For extra crispy, well-cooked chicken legs, plan on 50 to 60 minutes total, depending on the size of the legs and your oven.
Use a meat thermometer if you have one. The chicken is safe at 165°F, but chicken legs have the best texture when cooked closer to 175°F to 185°F.
What to Serve With Crispy Oven Chicken Legs
These crispy oven chicken legs go with just about anything.
Serve them with mashed potatoes, macaroni and cheese, rice, roasted vegetables, green beans, corn on the cob, coleslaw, biscuits, or a simple garden salad.
They would also be perfect with my Mama’s Macaroni Salad. That recipe is simple, old-school, and perfect for BBQs, picnics, potlucks, or an easy family dinner.

Dip Them in Alabama White Sauce
Now let’s talk sauce.
These crispy oven chicken legs are delicious on their own, but they are ridiculously good dipped in Alabama White Sauce.
Alabama White Sauce is creamy, tangy, peppery, and just sharp enough to cut through the richness of crispy chicken skin.
If you have never tried it with chicken, this is your sign.
Even Bon Appétit notes that Alabama White Sauce was popularized at Big Bob Gibson’s Bar-B-Q in Decatur, Alabama in 1925, and that it is commonly served with grilled or smoked chicken.
I say crispy oven chicken legs deserve a seat at that table too.
Serve the sauce on the side for dipping. Do not coat the chicken with it before baking because you worked hard for that crispy skin, and we are not ruining it at the finish line.
Can You Add BBQ Sauce?
Yes, but add it at the end.
If you want BBQ sauce, honey garlic sauce, buffalo sauce, or a glaze, brush it on during the last 5 to 8 minutes of baking.
Do not add sauce too early. Most sauces have sugar, and sugar burns before the chicken is done.
Burnt sauce and floppy skin are not the goal.
If you are serving these with Alabama White Sauce, I would keep the chicken plain and crispy, then dip each bite into the sauce.
That way you get the crunch and the creamy tang.
Best of both worlds.
How to Store Leftovers
Store leftover chicken legs in an airtight container in the refrigerator for 3 to 4 days.
They are also great cold the next day, straight from the fridge, eaten like you are standing in your mama’s kitchen.
No judgment here.
How to Reheat Crispy Chicken Legs
The best way to reheat crispy chicken legs is in the oven or air fryer.
Oven Method
Place chicken legs on a rack or baking sheet.
Bake at 375°F for 10 to 15 minutes, or until hot.
Air Fryer Method
Air fry at 375°F for 5 to 8 minutes, depending on the size of the chicken legs.
Avoid the microwave if you care about the crispy skin.
The microwave will heat them, yes, but it will also turn that gorgeous skin sad and rubbery.
The microwave is not always your friend.

Notes
Regular baking powder works fine.
Do not overcoat the chicken. A light coating is all you need.
For the crispiest skin, dry the chicken very well before seasoning.
A wire rack gives the best results because it lets the hot air circulate around the chicken.
If you do not have a wire rack, bake the chicken directly on a lined baking sheet and flip it halfway through cooking.
Chicken is safe at 165°F, but chicken legs have better texture when cooked to 175°F to 185°F.
If you want to add BBQ sauce or another glaze, brush it on only during the last 5 to 8 minutes of baking.
