Some of you may have seen this post previously from my previous blog, however, I thought since it was such a huge hit on that one I would post it here as well. Enjoy!!
These past several weeks, it has been hotter than hell down here in North Carolina as it has been in most places in the United States.
If you’re anything like me and my family, we don’t like hot food on hot days, which can sometimes make it a bit difficult to come up with a filling dinner for two adult males, one teen-aged male and a pregnant woman…oh yes, and myself.
This was the case the other night so I popped open the fridge and found some left over corn on the cob, left over hamburgers from the night before, an already opened bag of shredded cheddar cheese, a head of lettuce that needed to be used ASAP, and two opened bottles of Ranch dressing with about a 1/3rd of the bottle remaining in each (I’ll blame that one on the kids).
I grabbed a package of taco seasoning, the last of a bag of tortilla chips that were now all broken and a can of pinto and black beans out of the pantry and decided to make a taco salad to feed the masses.
First I cut the corn off of the cob using a trick I had seen on Rachael Ray. You turn a smaller bowl upside down in a larger bowl, place the cob of corn on the bottom of the smaller bowl and slice the corn off. It then all falls into the larger bowl.
I crumbled up the already cooked hamburgers into a frying pan, added some water and taco seasoning.
I poured the remaining ranch dressing into a bowl and added some cayenne pepper and smoked paprika, mixing it all together. Then I drained the two cans of beans and tossed them together in a bowl.
Plating this up was a breeze…..
Lettuce, then corn, then hamburger mix, then beans, then cheddar cheese then crushed tortilla chips topped with the dressing mix.
Ta da!!!
Of course you can add anything else that you have left over that your family would like as well. Onions, salsa, sour cream, avocado…. you get the idea.
Needless to say, it was a HUGE success!!!
