When you are making these, you might want to make a double batch or maybe even a triple batch. These are great to make, roll and then freeze. Then you can pop them out of the freezer and into the oven when guests show up unexpectedly.

Lip Smacking Good Sausage Balls
2 1/2 cups baking mix
2 1/2 cups sharp or extra sharp cheddar cheese
1 lb hot sausage (we use Jimmy Dean)
1 tsp garlic powder
1/2 tsp cayenne pepper
2 or 3 green onions finely chopped (green tops only)
Preheat oven to 350 degrees
Break apart sausage into a mixing bowl
Add remainder of ingredients
Using your fingers, mix this all together. It is gonna take a bit of work but don’t worry, it really does all mix together to form a dough.
Roll dough into 1 inch balls and place on a baking sheet
Bake for 20 – 24 minutes
Remove from baking sheet right away
Now…..ENJOY!!!
Makes approximately 5 dozen
If you would like to freeze these, put them on a baking sheet, and instead of baking, pop them into the freezer until firm. You can then plop them all into a Ziploc and freeze them until you are ready to use them. You will need to extend the baking for a few minutes when baking from a frozen state.

It is easiest to put it all in the food processor. It mixes it up really well without getting it under your nails. Yuck!

The only problem I have with the food processor is that it makes the pieces of cheese so small. I use the regular shredded cheese (not fancy or fine shred) specifically because of that. Although I have to agree, not having the dough under your nails would be nice LOL
