These little gems are so quick, easy, and delicious that you will be making them often.
I make a lot of candy during the holiday season but caramel is just one of those things I had never made. To me it was too intimidating to make sure that it wasn’t overdone or underdone (yep, I know, SILLY!!)
Well, this recipe changed my world! Alright, not my world but definitely my entire perception of making caramel.

Quick and Easy Microwave Caramels
1 cup butter
1 cup White Sugar
1 cup Brown Sugar
1 cup Light Karo Syrup
1 can Sweetened Condensed Milk
In a large microwave-safe bowl melt the butter for 1 minute.
Remove from the microwave and add the rest of the ingredients. Mix well.
Place back into the microwave and cook on high for 3 minutes. Take the bowl from the microwave and stir well.
Continue cooking on high for an additional 3 minutes, remove and stir.
Cook for 3 more minutes ( for a total of 9 mins.)
Remove from the microwave, stir and pour into a lightly buttered 9 x 13 pan.
Once caramel has set, wrap in wax paper and store in an air tight container.

How long did this take to set for you? I made this recipe last night, and while it makes beautiful and great tasting caramel, it isn’t setting for me. I am trying the freezer now to see if that will help firm it up. Otherwise, it will make a great caramel sauce!

I made these caramels following the recipe by the letter. I’ve made a lot of different candies over the years.
I could not get these to set using the recipe.l even keeping in the refrigerator. Taste great but more like “spoon” caramels.
