FAQ for Roasted Chickpeas
Why are my chickpeas not crispy?
Roasted chickpeas usually turn soft for two reasons. They were not dried enough, or they were crowded on the pan. Dry the chickpeas really well before seasoning, and spread them in a single layer so they roast instead of steaming.
Do I have to peel the chickpea skins?
No. You do not have to peel chickpeas to make them crispy. If some skins fall off while drying, toss them. The recipe still works either way.
How long do roasted chickpeas take to get crunchy?
Most chickpeas get crispy in 25 to 35 minutes at 400°F, but the real crunch shows up after they cool for 5 to 10 minutes. If you pull them early, they can taste done but still feel a little chewy.
Can I make roasted chickpeas in the air fryer?
Yes. These work great in the air fryer. Dry them well, season, then air fry around 390°F, shaking the basket often, until they are crisp. The exact time depends on your air fryer, so start checking around 10 minutes. This is the air fryer that I have, and I absolutely love it.
